Raisin Pumpkin Muffins

  1. Sift flour into a bowl.
  2. Stir through brown sugar, baking powder, baking soda and mixed spice.
  3. Remove seeds from pumpkin pieces and microwave on high for 5 minutes until just cooked but still firm.
  4. Remove skin and cut into 1cm slices.
  5. Toss through dry ingredients with raisins.
  6. Beat eggs together in a bowl.
  7. Add milk.
  8. Melt butter.
  9. Make a well in the centre of the dry ingredients.
  10. Add egg mixture, then butter.
  11. Mix through gently.
  12. Three-quarter fill greased muffin tins or line with muffin cases.
  13. Sprinkle over pumpkin seeds and raw sugar.
  14. Bake at 200 degrees C for 20-25 minutes or until muffins spring back when lightly touched.
