Microwaved Doubanjiang Mayo Spicy Eggplant

  1. Combine the ingredients in a dish.
  2. Cut the eggplant into bite-sized chunks.
  3. Wrap with plastic wrap and microwave for about 4 minutes until wilted.
  4. Remove the wrap and lightly stir.
  5. The residual heat will evenly wilt all of the eggplant.
  6. Let cool.
  7. Mix the sauce from Step 1 with the sardines until the sardines are completely coated in the seasonings.
  8. Garnish with the chopped leek and enjoy.
  9. This time, I used a large eggplant.
  10. If using thin eggplants, you may need to use 2 or 3.
