Ham, Cheese, and Veggie Pie

  1. Preheat oven to 350 degrees F. Place one pie crust in the bottom of a pie dish.
  2. Set the dish aside and set the second crust aside as well.
  3. Spread the onions, peppers, and tomatoes evenly on the pie crust.
  4. Slice deli ham into short strips and spread evenly over the veggies.
  5. Then cover that with the peas and carrots.
  6. Next add a layer of shredded cheese.
  7. In a small bowl whisk together the eggs, oregano and Parmesan cheese.
  8. Add salt and pepper to taste.
  9. Pour the egg mixture over the entire contents of the pie.
  10. Cut slits or a small hole in the second pie crust and place it on top of the pie.
  11. Crimp the edges of the two crusts together using your hands to form a seal.
  12. Mix together the milk and the sugar.
  13. With a pastry brush, brush the top pie crust with a thin coat of the mixture.
  14. Place pie in the oven and bake at 350 degrees F for 30-35 minutes until the crust is a golden color.
