Apple Preserves Recipe

  1. Combine apples, water and lemon juice in large saucepan.
  2. Simmer, covered,10 min.
  3. Stir in pectin and bring to a boil, stirring frequently.
  4. Add in lemon slices and sugar.
  5. Return to a rolling boil.
  6. Boil hard 1 minute, stirring frequently.
  7. Remove from heat; add in nutmeg.
  8. Pour in warm jars, leaving 1/4 inch head space.
  9. Adjust caps.
  10. Process 10 min in boiling water bath.
  11. This recipe yields about 6 half-pints.
  12. Yield: 6 half-pints
