Mediterranean Veggie Sandwich
- 2 slices Multi Grain Bread
- 1 Tablespoon Pine Nut Hummus
- 1- 1/2 Tablespoon Feta Cheese
- Handful Of Spinach
- 1 slice Tomato, Cut In Half
- 6 slices Cucumber
- Red Onion Slices
- 3 whole Small Peppadew Piquant Peppers
- A Couple Of Dashes Of Balsamic Vinegar
- Layer the ingredients as follows: bread, hummus, feta, spinach, tomato, cucumber, onion, peppers, balsamic vinegar and then top with the other slice of bread.
- Note: cucumbers and red onion were sliced with a mandoline to make thin slices.
