Mediterranean Veggie Sandwich

  1. Layer the ingredients as follows: bread, hummus, feta, spinach, tomato, cucumber, onion, peppers, balsamic vinegar and then top with the other slice of bread.
  2. Note: cucumbers and red onion were sliced with a mandoline to make thin slices.
