Harvest Fry Up
- 1 acorn squash
- 2 garlic cloves
- 2 teaspoons olive oil
- 1 (16 ounce) package smoked sausage
- 1 large apple, any variety (I used a Pink Lady)
- 12 vidalia onion
- 1 green pepper
- 2 teaspoons grapeseed oil
- Split the squash in half and scoop out the seeds.
- Finely chop the garlic and add one half to each squash half.
- Add one tsp olive oil to each squash half.
- Cover with foil and bake at 375 until tender (about an hour).
- This step can be done a day ahead of time.
- Slice thinly the apple and sausage.
- Julienne the green pepper and onion.
- Heat the grapesed oil (canola can be subsituted) in a deep saute pan.
- Add the sausage, apple, onion, and green pepper.
- While the pan is sauteing, peel and dice the squash.
- Add squash to the saute pan.
- Remove from heat when apples are tender but not mushy.
