Garlicky Cannellini Beans with Spinach & Tomatoes

  1. Press the garlic clove, and saute for less than a minute in the olive oil to take the harshness away from the garlic.
  2. Rinse the cannellini beans and add to the cooking vessel, along with the water, spinach, rosemary, oregano, black pepper, spinach, & white cooking wine.
  3. Simmer for 30 minutes, stirring occasionally.
  4. Drain the liquid from the diced tomatoes and add them to the mixture.
  5. Simmer for 2 additional minutes and serve.
