Garlicky Cannellini Beans with Spinach & Tomatoes
- 2 can Cannellini Beans
- 1 can Diced Tomatoes
- 1 tbsp Olive Oil
- 1 clove Garlic
- 1/2 tsp rosemary
- 1 tsp oregano
- 1/4 tsp black pepper
- 1/4 cup white cooking wine
- 3/4 cup frozen spinach
- 1 cup water
- Press the garlic clove, and saute for less than a minute in the olive oil to take the harshness away from the garlic.
- Rinse the cannellini beans and add to the cooking vessel, along with the water, spinach, rosemary, oregano, black pepper, spinach, & white cooking wine.
- Simmer for 30 minutes, stirring occasionally.
- Drain the liquid from the diced tomatoes and add them to the mixture.
- Simmer for 2 additional minutes and serve.
