Barley Croquettes
- 1 Tbs. vegetable shortening
- 23 cup chopped onions
- 1 clove garlic, chopped
- 1 pinch herbes de Provence
- 1 tsp. tamari soy sauce
- Salt and freshly ground black pepper to taste
- 3 slices whole wheat bread
- 1/4 cup plus 1 Tbs. (3 oz.) bread-crumbs
- 1/4 cup cubed tofu
- 1 oz. brewers yeast
- 1 oz. grated Swiss cheese
- 3 oz. barley flakes
- 1 large egg, beaten
- 2 Tbs. vegetable oil
- Heat shortening in large saucepan over low heat.
- Add onions, garlic, herbes de Provence, tamari soy sauce, salt and pepper.
- Mix, and cook for 8 minutes.
- Place mixture into mixing bowl, and add bread, breadcrumbs, tofu, brewers yeast and cheese.
- Using electric mixer, beat until well blended.
- Stir in barley flakes, then stir in egg until well blended.
- Shape mixture into 3-inch rounds.
- Heat oil in large skillet over medium heat.
- When hot, panfry patties until browned on both sides.
- Remove from heat, drain on paper towels and serve.
