Mexican Corn Bread With Ground Meat Recipe
- 1 c. yellow cornmeal
- 2 Large eggs, well beaten
- 1 c. sweet lowfat milk
- 1/2 teaspoon soda
- 3/4 teaspoon salt
- 1 (No. 303) can cream style yellow corn
- 1/2 c. bacon drippings
- Mix all the above and the lowfat milk is sweet sufficient though soda is used.
- Set aside.
- Saute/fry 1/2 lb.
- of grnd meat.
- Put on an absorbent towel to drain grease.
- The next three ingredients are prepared and placed in separate mounds ready to be used.
- 1/2 pound rat cheese, grated 4 canned jalapeno peppers, minced
- Grease a large black iron skillet, heat.
- Sprinkle a very thin layer of meal in skillet and let it brown slightly.
- Pour one half the batter in skillet.
- Sprinkle cheese, proportionately over the batter.
- Then the meat, next the onion and finally, the peppers.
- Pour remaining batter on top.
- Bake 45 to 50 min at 350 degrees.
