Chicken in Riesling With Cremini Mushrooms

  1. Mix flour, paprika, salt and pepper on a plate.
  2. Coat chicken on all sides with the flour mixture.
  3. Heat butter or olive oil in a large skillet over medium-high heat; add chicken.
  4. Cook, turning, until browned on both sides, about 3 minutes per side; reduce heat to low.
  5. Cover; cook chicken until no longer pink in the middle, about 10 minutes.
  6. Remove chicken to a platter.
  7. Add mushrooms to skillet; turn heat to high.
  8. Cook, stirring, until lightly browned, about 3 minutes.
  9. Stir in riesling, scraping up browned bits on bottom of pan.
  10. Cook until slightly reduced, about 5 minutes.
  11. Stir in cream; heat 1 minute.
  12. Season with salt and pepper if needed.
  13. Return chicken to the sauce; turn to coat.
  14. Heat to warm, about 2 minutes.
  15. This is great served over noodles.
