Beef Stroganoff Pie
- 1 lb lean ground beef
- vegetable oil cooking spray
- 4 12 ounces sliced mushrooms, drained
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 12 cup Bisquick baking mix
- 1 cup milk
- 14 cup sour cream
- 1 teaspoon salt
- 14 teaspoon pepper
- 2 eggs
- fresh parsley, chopped
- Heat oven to 400F.
- Spray pie plate with cooking spray.
- In a 10-inch skillet, cook beef mushrooms, onion and garlic over medium heat for 8 to 10 minutes, stirring occasionally, until beef is browned; drain.
- Spread in pie plate.
- Stir remaining ingredients except parsley in a medium bowl with wire whisk until blended.
- Pour into pie plate.
- Sprinkle on parsley.
- Bake 30 to 35 minutes until knife inserted in center comes out clean.
- Let stand 5 minutes before serving.
