Chorizo En Sidra (Chorizo in Cider)
- 3 tablespoons olive oil
- 1 small onion, minced
- 1 12 teaspoons sweet paprika (pimenton)
- 12 cup apple cider (alcoholic)
- 14 cup chicken stock
- 1 bay leaf
- 2 spanish chorizo, sliced diagonally (about 3/4 pound)
- 2 teaspoons sherry wine vinegar
- 2 teaspoons fresh parsley, minced
- Heat oil in saucepan over low heat, add the onion and cook for 6 minutes (until soft), stirring occasionally.
- Add the paprika and cook for 1 minute, stirring constantly.
- Increase the heat to medium and add the cider, stock and bay leak to the pan and bring to a boil.
- Reduce the heat and simmer for 5 minutes.
- Add the chorizo and simmer for 5 additional minutes.
- Stir in the sherry vinegar and parsley.
- Season to taste and serve hot.
