Chorizo En Sidra (Chorizo in Cider)

  1. Heat oil in saucepan over low heat, add the onion and cook for 6 minutes (until soft), stirring occasionally.
  2. Add the paprika and cook for 1 minute, stirring constantly.
  3. Increase the heat to medium and add the cider, stock and bay leak to the pan and bring to a boil.
  4. Reduce the heat and simmer for 5 minutes.
  5. Add the chorizo and simmer for 5 additional minutes.
  6. Stir in the sherry vinegar and parsley.
  7. Season to taste and serve hot.
