Muffins with BANANA NUT CRUNCH

  1. Sift together flour, sugar and baking powder into large bowl.
  2. Stir in crushed cereal.
  3. Mix bananas, milk, egg product and apple butter in separate bowl until well blended.
  4. Add all at once to flour mixture; stir just until moistened.
  5. Cover; let stand 20 minutes.
  6. Portion evenly into 70 medium muffin pan cups sprayed with cooking spray (or 14 muffin cups for trial recipe), using a #24 scoop.
  7. Bake in 375F-conventional oven for 20 minutes or until wooden pick inserted near centers comes out clean.
