Muffins with BANANA NUT CRUNCH
- 2-1/2 cups flour
- 1 cup sugar
- 1/3 cup CALUMET Baking Powder
- 2 qt. POST BANANA NUT CRUNCH Cereal, crushed
- 1-1/4 qt. Ripe bananas, mashed
- 2-1/2 cups fat-free milk
- 1-1/4 cups cholesterol-free egg product
- 2/3 cup Apple butter
- Sift together flour, sugar and baking powder into large bowl.
- Stir in crushed cereal.
- Mix bananas, milk, egg product and apple butter in separate bowl until well blended.
- Add all at once to flour mixture; stir just until moistened.
- Cover; let stand 20 minutes.
- Portion evenly into 70 medium muffin pan cups sprayed with cooking spray (or 14 muffin cups for trial recipe), using a #24 scoop.
- Bake in 375F-conventional oven for 20 minutes or until wooden pick inserted near centers comes out clean.
