Pumpkin Bread or Muffins

  1. Preheat oven to 350.
  2. In a large bowl, mix flour, brown and white sugar, baking powder, salt, cinnamon, nutmeg.
  3. In another bowl, mix together egg white, yogurt, oil, vanilla and pumpkin.
  4. Add wet ingredients to dry ingredients and mix well.
  5. Spray two loaf pan with cooking spray then add the batter.
  6. If making muffins, spray muffin tins with cooking spray or line with muffin tin liners.
  7. Bake in loaf pans for 55-60 minutes and bake muffins for 25-30 minutes.
  8. Take out of pans or muffin tins and cool on a baking rack.
  9. Variations: Use 1/2 cup mashed Banana in place of the pumpkin.
