  1. In a small bowl, whisk together vinegar, soy sauce, and sesame oil.
  2. In a large skillet, bring the water and ginger to a boil.
  3. Add bok choy; reduce to a simmer.
  4. Cover; cook until stems are fork-tender, 3 to 5 minutes.
  5. Drain well; discard ginger.
  6. Transfer bok choy to a serving platter, drizzle with vinegar-soy mixture, and serve immediately.
