Queso Fundido
- 1/2 packages 14 Oz Package Chorizo (Pork Or Beef)
- 1/2 cups Cup Fresh Poblano Pepper, Seeded And Sliced In 1/2 Inch Strips
- 1/2 cups Cup White Onion, Sliced In 1/2 Inch Strips
- 1/2 cups Cup Of Tequila
- 1 package (15 Oz. Size) Queso Quesadilla Cheese, Shredded
- 1/4 cups Cup Finely Chopped Tomato
- 1 Tablespoon Chopped Fresh Cilantro
- Preheat oven to 350F.
- In an oven proof skillet, cook the chorizo until almost done.
- Drain well.
- Add the poblano and onion and cook until tender.
- Completely remove pan from heat.
- Carefully add tequila.
- Return to heat and simmer uncovered for 15 to 20 seconds or until most of the tequila has dissipated.
- Stir in cheese.
- Bake uncovered for 15 minutes or until cheese is completely melted and slightly golden brown on top.
- Sprinkle with tomatoes and cilantro.
- Serve with tortilla chips.
- Note: If you double the recipe, do not double the tequila.
