Red Eye Gravy
- 1/2 c. olive oil
- 2 tsp. minced garlic
- 3 bay leaves
- 1 c. onions, finely chopped
- 3 c. boiling hot black coffee (not decaffeinated)
- 3 tsp. chicken base
- 3 c. canned tomato sauce
- 2 tsp. salt
- 1/2 tsp. red pepper (preferably cayenne pepper)
- 1 tsp. dried basil leaves
- 1/2 tsp. white pepper
- roux (thicken with roux for desired consistency)
- 3 pt. pineapple juice
- 3 pt. orange juice
- 1 large red onion, thinly sliced
- 4 oz. soy sauce
- 2 oz. red wine vinegar
- 4 oz. salad oil or olive oil
- 4 limes, sliced
- 2 Tbsp. minced garlic
- 3/4 oz. jalapeno peppers, minced
- 1/3 oz. chili powder
- 10 drops Tabasco sauce
- Combine all ingredients together in a very large bowl.
- Add the steaks and turn gently to coat both sides of the meat with the marinade liquid.
- Refrigerate and let marinate overnight.
- Ready to grill or broil.
- If cooking the steaks outside on a grill, baste your meats with this mixture while steaks are cooking.
