Thai Chicken Pizza
- 2 tablespoons Land O Lakes Butter
- 1/2 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon mirin
- 1 tablespoon seasoned rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1/2 teaspoon finely chopped fresh garlic
- 1/4 teaspoon freshly grated ginger root*
- 1/3 cup bottled Thai peanut sauce
- 1 (12-inch) prepared thin pizza crust
- 1 1/4 cups broccoli slaw
- 3 tablespoons sliced green onions
- 1/2 cup shredded pepper jack cheese
- Fresh cilantro leaves, if desired
- Chopped peanuts, if desired
- Heat oven to 450F.
- Melt butter in 10-inch nonstick skillet over medium-low heat just until sizzling.
- Add chicken; cook 4-5 minutes or until chicken is no longer pink.
- Combine all teriyaki glaze ingredients in 1 1/2-quart saucepan; cook over medium heat 4-5 minutes or until liquid is reduced to thick paste.
- Stir in chicken until well coated.
- Set aside.
- Spread peanut sauce over pizza crust.
- Top with broccoli slaw, green onions, cheese and glazed chicken.
- Place pizza directly onto oven rack.
- Bake 10-12 minutes or until cheese is melted.
- Top with cilantro and peanuts, if desired.
- *Substitute 1/8 teaspoon ground ginger.
