Tortellini Soup

  1. In a large saucepan or Dutch oven heat oil.
  2. Add onion, mushrooms and garlic.
  3. Cook, stirring occasionally, until onion is tender.
  4. Add chicken broth and water.
  5. Bring to a boil.
  6. Add tortellini and peas.
  7. Return to a boil and cook for 6 to 12 minutes or until tortellini is tender.
  8. Stir in parsley.
