Beef Vegetable Cabbage Soup
- 1 can tomato juice
- 1 can 2 plus cup (lg.) water
- 1/2 onion, diced
- 2 carrots, cut up
- 4 potatoes, cut up
- 1-1/2 cup frozen corn
- 1 can green beans
- 3/8 head cabbage, thinly sliced
- 1 to 1-1/2 lb. beef chuck, cut into bite size pieces
- 8 cubes beef bouillon (I prefer Better Than Bouillon)
- 4 cloves garlic
- Salt and pepper to taste
- In a large pot, add the juice and water.
- Then add the onion, garlic, carrots, potatoes and cabbage.
- Bring to a boil, then simmer for 35 minutes.
- Then add the corn, green beans, beef chuck and beef cubes.
- Simmer for another 40 minutes or so, until beef is tender.
- Season with salt and pepper.
