Sausage Stuffing in Apples
- 4 large apples, gala or fuji
- 4 slices whole grain bread
- 1 lb pork sausage
- 2 large eggs
- 2 tablespoons fresh sage, minced
- 1 tablespoon orange marmalade
- 1 teaspoon cider vinegar
- 1 teaspoon salt
- 2 teaspoons pepper
- Preheat the oven to 400 degrees.
- Trim the bottoms of the apples so that they stand sturdy, then cut a "lid" off the top of each one, about half and inch.
- Using a knife or melon baller, hollow out the center of each apple, removing the seeds especially.
- Toss any edible bits into a mixing bowl.
- Toast the bread until slightly crunchy, then slice into small cubes.
- Toss bread and remaining ingredients together into the mixing bowl well.
- Fill the apples with the pork mixture and bake for 30-45 minutes, unitl the internal temperature is 165 degrees.
