Pork Cassis Recipe

  1. In fat side of pork, cut 6 deep slits.
  2. Put 1 piece of garlic, a piece of pickle and 1/6 of the bay leaf.
  3. Salt and pepper the top of roast.
  4. Preheat oven to 450 degrees.
  5. Sear meat for 20 min.
  6. Pour ice water over meat.
  7. Reduce oven to 325 degrees.
  8. Roast 1 hour.
  9. Pour creme de cassis over roast.
  10. Cook to desired doneness.
