Salmon Burger

  1. Process 5 slices fresh whole wheat bread in the blender or food processor (youll get about 2 1/2 cups crumbs).
  2. Beat 3 eggs in a large bowl.
  3. Add a 16-oz.
  4. can salmon (drained), the bread crumbs, 2/3 cup chopped celery and 1/3 cup chopped green onions.
  5. Shape firmly into 4 patties.
  6. Warm 2 Tbsp.
  7. vegetable oil in a skillet over medium heat; add patties and fry about 10 minutes, or until browned, turning once.
  8. Place each burger on a toasted English muffin.
  9. Garnish with your favorite fixings and make some frozen oven fries for a side dish
