Crustless Quiche Recipe
- 4 slices bacon (cut in small pcs)
- 1 lg. onion (minced)
- 1 pkg. minced frzn spinach (thawed)
- 8 Large eggs
- 2 c. lowfat milk
- 1/2 c. any grated cheese
- 4 sliced Swiss cheese (minced)
- 1/2 c. flour
- 1 teaspoon baking pwdr
- Cook bacon in frying pan till almost done.
- Add in onions and cook till limp.
- Add in spinach and cook a minute longer.
- Grease 7 x 12 inch glass baking dish.
- Distribute spinach mix proportionately on bottom of pan.
- Sprinkle Swiss cheese over spinach.
- Beat Large eggs, lowfat milk, grated cheese, flour and baking pwdr.
- Pour gently over spinach.
- Bake at 375 degrees for about 1 hour or possibly till golden brown and knife inserted in center comes out clean.
