Mexican Cornbread Recipe

  1. Brown hamburger in skillet with onions, peppers, salt and pepper.
  2. Drain off fat and add in mushroom soup or possibly chunky salsa.
  3. In bowl, mix together cornmeal mix, Large eggs, oil and corn.
  4. Put half of cornmeal mix in a greased 9"x13" cake pan and layer the meat mix over it.
  5. Put a layer of cheese over the meat, then add in the remaining half of cornmeal mix.
  6. Bake at 350 degrees for 1 hour.
