Leftover fried chicken made into a casserole
- 1 1/2 cup celery sliced thin with a bit of celery leafs.
- 1 cup onion diced
- 1 yellow bell pepper sliced long way(take out seeds)
- 5 clove fresh garlic diced
- 1 tsp black pepper
- 1 tsp garlic powdee
- 1/2 tsp salt
- 1/2 tsp cumin powder
- 1 can (14.5) tomatoes diced
- 1 can (14.5) chicken both
- 1 tbsp chopped cilantro
- 5 leftover peices of fried chicken (like 2 brest ,2 thighs ,1leg ) skined crust and deboned keeping the crust for later.
- A can of chicken both in to a lg saucepan, bring to a light boil, on medium heat.
- Add all the the ingredients except the chicken,u will put the chicken peices later.let lightly boil for 5 minutes,
- U should have about 1 cup of both juice left mixed in the saucepan, if there is still alot of juice in the saucepan, then boil it a few minutes more.
- Now add chicken peice in to saucepan, boil for 2 minutes, take off heat set to side, for now.
- Now take ur crust from the chicken into a food processor, turn on low for 10 seconds.untill small peices not to small.
- Now take the chicken mixture,place it into a casserole dish, about an 9" dish, sprinkle the crumbs on top,set into oven, top rack, put on broil for a couple minutes til crumbs become crispy again.
- ....dont walk away stay watching the dish.this wont take long.
- Take it out of the oven, served hot or warm.
- Its great on a bed of rice,,, oh so good.
