Double Lemon Bars

  1. Heat oven to 350F.
  2. Grease 8- or 9-inch square baking pan; set aside.
  3. Combine all crust ingredients in bowl.
  4. Beat at medium speed, scraping bowl often, until well mixed.
  5. Press into prepared pan.
  6. Bake 15-17 minutes or until edges are lightly browned.
  7. Combine all filling ingredients in same bowl.
  8. Beat at medium speed until well mixed.
  9. Pour filling over hot, partially baked crust.
  10. Continue baking 17-20 minutes or until top is light golden brown.
  11. Sprinkle with powdered sugar.
  12. Cool completely.
  13. Cut into bars.
