Double Lemon Bars
- 1/2 cup Land O Lakes Butter, softened
- 1/2 cup sugar
- 1 1/4 cups all-purpose flour
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons lemon juice
- 1 tablespoon freshly grated lemon zest
- 2 Land O Lakes Eggs
- Powdered sugar
- Heat oven to 350F.
- Grease 8- or 9-inch square baking pan; set aside.
- Combine all crust ingredients in bowl.
- Beat at medium speed, scraping bowl often, until well mixed.
- Press into prepared pan.
- Bake 15-17 minutes or until edges are lightly browned.
- Combine all filling ingredients in same bowl.
- Beat at medium speed until well mixed.
- Pour filling over hot, partially baked crust.
- Continue baking 17-20 minutes or until top is light golden brown.
- Sprinkle with powdered sugar.
- Cool completely.
- Cut into bars.
