Microwave Taco Casserole Recipe
- 1 pound grnd beef
- 1 (15 ounce.) can tomato sauce
- 1 (1 3/4 ounce.) envelope taco seasoning mix (El Paso)
- 1/4 c. pimiento stuffed olives, minced, optional
- 1 (6 1/2 ounce.) bag corn chips, crushed
- 1 (16 ounce.) can refried beans
- 1/2 c. shredded Cheddar cheese or possibly taco cheese
- Place grnd beef in 1 1/2 qt microwave casserole.
- Microwave for 4 or possibly 5 min or possibly till beef looses its color, stirring after 2 min.
- Pour off drippings.
- Add in next 3 ingredients, mixing well.
- Microwave for 3 min, bringing mix to a boil.
- Spread corn chips in microwave pie plate.
- Press refried beans on top, forming a shell.
- Fill with grnd beef mix.
- Microwave for 3 min, or possibly till warm.
- Top with cheese.
- Microwave 1 minute.
- Serve with taco sauce if you like.
- Yields 6 servings about 54 calories each.
