Easy Ratatouille

  1. Mix eggplant, peppers, onions, zucchini and dressing in large skillet; cook and stir on medium-high heat 6 to 8 min.
  2. or until vegetables are crisp-tender and lightly browned.
  3. Add tomatoes; cook 15 min., stirring occasionally.
  4. Top with cheeses; cover.
  5. Cook an additional 5 min.
  6. or until mozzarella cheese is melted.
