Coconut Sticky Rice & Mango

  1. Cook sticky rice as directed on package, and cool
  2. In pan, combine coconut milk, sugar and salt
  3. When rice is cooled, place in large bowl
  4. Add milk mixture to rice and fold to combine
  5. Fold in mango and jackfruit
  6. Cover rice and let stand for 20-30 minutes for coconut milk to be absorbed
  7. To serve, place a scoop of rice on plate with fresh mango slices and top with toasted coconut.
