Ham and Cheese Quiche
- 4 eggs
- 1-1/2 cup whipping cream
- 1/2 tsp. salt
- 2 oz. cheddar cheese
- 2 oz. swiss cheese
- 1 cup ham, cooked and diced
- 1/4 tsp. black pepper
- 1 unbaked pastry shell
- 1 sm. onion, chopped
- 1 can (4 oz.) mushrooms, drained
- Saute onions and mushrooms.
- Spread diced ham in bottom of pastry shell.
- Add onions, mushrooms and 1/2 of the mixed cheeses.
- Lightly beat eggs.
- Add cream and seasonings, blending until smooth.
- Set pastry shell on a cookie sheet and carefully pour in custard mixture.
- Sprinkle with remaining cheeses.
- Bake at 375F for 1/2 hour or until top is puffed and brown, and if a knife is inserted into the middle comes out clean.
- Remove from oven and cool 10 minutes to let custard set.
- Serve.
