Ham and Cheese Quiche

  1. Saute onions and mushrooms.
  2. Spread diced ham in bottom of pastry shell.
  3. Add onions, mushrooms and 1/2 of the mixed cheeses.
  4. Lightly beat eggs.
  5. Add cream and seasonings, blending until smooth.
  6. Set pastry shell on a cookie sheet and carefully pour in custard mixture.
  7. Sprinkle with remaining cheeses.
  8. Bake at 375F for 1/2 hour or until top is puffed and brown, and if a knife is inserted into the middle comes out clean.
  9. Remove from oven and cool 10 minutes to let custard set.
  10. Serve.
