Cucumber-Yogurt Crabmeat Salad

  1. Blend and puree ingredients (except crabmeat, tomato, and lettuce) until smooth.
  2. Adjust salt and pepper to taste.
  3. Fold in crabmeat.
  4. Slice tomato and head of lettuce into thick serving beds.
  5. Arrange lettuce head slice.
  6. Top with tomato.
  7. Scoop crabmeat mixture atop.
  8. Serve.
