Broccoli-Millet Timbales

  1. Lightly grease four custard cups, or spray with nonstick spray.
  2. In a small saucepan, bring water or vegetable broth to a boil.
  3. Stir in millet.
  4. Cover, reduce ehat, and cook 20 minutes or until water/broth is absorbed.
  5. Meanwhile, heat oil in a nonstick skillet over medium heat.
  6. Add onion and garlic.
  7. Cook and stir until onion is tender, about 4-5 minutes.
  8. Stir in broccoli, salt and pepper.
  9. Cook and stir 5 minutes longer.
  10. Remove skillet from heat and stir in cooked millet.
  11. Pack firmly into greased custard cups.
  12. Invert onto serving plate so that mixture slides out in upside down bowl shape.
  13. Sprinkle lightly with Parmesan cheese, if desired.
  14. Serve.
