CARROT CAKE

  1. Preheat oven 180C.
  2. Cream eggs and sugar together
  3. Add oil, carrots, nuts, and bananas
  4. Add dry ingredients
  5. Pour into Prepared cake tins 20x20 for square or standard round cake tin.
  6. Don't over fill as it rises quite alot.
  7. Bake for 30 minutes or until centre is dry when you stick skewer in it
  8. For the icing...wait for the cake to cool down
  9. Cream together butter and sugar
  10. Add cream cheese and mix
  11. Add vanilla essence and mix
  12. Grate carrot and lemon rind or nuts to garnish
