Luck Of The Irish Meat Loaf Recipe
- 1 1/2 lbs. grnd beef
- 1/2 pound grnd pork
- 3 c. soft bread crumbs
- 1 egg
- 1/2 c. chopped onion
- 3/4 c. lowfat milk
- 2 teaspoon salt
- 1 1/4 teaspoon ginger
- 2 c. peeled minced cooking apple
- 1 1/2 c. mashed potato flakes
- 1 pkg. (10 ounce.) frzn minced broccoli, cooked and liquid removed
- 1/2 c. shredded Cheddar cheese
- In a bowl blend together beef and pork.
- Add in bread crumbs, egg, onions, lowfat milk, salt and ginger.
- Lightly mix to blend.
- Stir in apples.
- On a jelly roll pan shape into loaf.
- Bake in a preheated oven, 350 degrees, for 45 min.
- Drain off excess fat.
- Prepare potato flakes according to package directions.
- Combine potato and broccoli.
- Frost loaf with potato mix.
- Sprinkle top with Cheddar cheese and bake an additional 15 min.
- Let stand 5 min before removing to a warmed platter.
- Makes 8-10 servings.
