Apple Cookies
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 14 teaspoon baking soda
- 14 teaspoon ground nutmeg
- 18 teaspoon ground cloves
- 12 cup butter or 12 cup margarine
- 1 cup sugar
- 2 eggs
- 2 large apples, peeled, cored and shredded
- 4 teaspoons sugar
- 14 teaspoon ground cinnamon
- Lightly grease cookie sheet.
- Set aside.
- In a mixing bowl, stir together 1st six ingredients.
- Set aside.
- In large mixing bowl, beat softened butter or margarine on medium speed for 30 seconds.
- Add sugar and beat until fluffy.
- Add eggs and beat well.
- Stir in shredded apples.
- Gradually add flour mixture, beating until combined.
- Drop by rounded teaspoons on cooking sheet 2 inches apart.
- Stir together the 4 tsps.
- sugar and the 1/4 teaspoons cinnamon.
- Sprinkle cinnamon-sugar mixture over tops of cookie dough.
- Bake in 375 degree oven for 8-10 minutes or till bottoms are lightly browned.
- Cool on cookie sheet for 1 minute.
- Remove and cool completely on wire racks, if you can wait that long.
- Makes about 40 cookies.
