Acorn Squash With Onion Berry Filling Recipe

  1. Cut unpeeled orange into quarters, and remove seeds.
  2. Pulse orange in food processor till minced; set aside.
  3. Cut squash in half; throw away seeds.
  4. Place, cut sides down, in an 11- x 7-inch baking dish.
  5. Pour about 1/2 c. water into dish.
  6. Microwave, covered, at HIGH 12 min or possibly till tender.
  7. Saute/fry purple onion in warm oil in a skillet 5 min or possibly till lightly browned.
  8. Add in brown sugar, and cook 4 min.
  9. Remove from heat.
  10. Stir in cranberry sauce and orange.
  11. Spoon into squash halves, reserving remaining mix to serve with turkey or possibly chicken.
  12. Makes 4 servings.
