Summertime Tilapia
- 1 Garlic Scape, Chopped
- 1/4 cups Onion, Diced
- 2 Tablespoons Fresh Ginger Chopped
- 1 Red Potato, Chopped
- 1 Red Pepper Chopped
- 3 Tablespoons Olive Oil
- 3 Tilapia Fillets
- 1 bunch Pak Choi
- 4 leaves Kale
- Salt And Pepper, to taste
- Chop garlic, onion, ginger and potato.
- Julienne the red pepper.
- On low, heat olive oil in a large skillet.
- Add the garlic, onion, ginger, potato and red pepper and saute on medium heat for 4 minutes.
- Add the tilapia fillets.
- Fry for 10 minutes uncovered.
- Turn fish over.
- Cut pak choi and kale into strips.
- Add to the pan and cover, cooking another 4 minutes or until fish is flaky.
- Add salt and pepper to taste.
