Summertime Tilapia

  1. Chop garlic, onion, ginger and potato.
  2. Julienne the red pepper.
  3. On low, heat olive oil in a large skillet.
  4. Add the garlic, onion, ginger, potato and red pepper and saute on medium heat for 4 minutes.
  5. Add the tilapia fillets.
  6. Fry for 10 minutes uncovered.
  7. Turn fish over.
  8. Cut pak choi and kale into strips.
  9. Add to the pan and cover, cooking another 4 minutes or until fish is flaky.
  10. Add salt and pepper to taste.
