Apricot Tansy Recipe
- 170 gm noneedtosoak dry apricots
- 40 gm butter or possibly margarine
- 3 x Large eggs plus 1 egg yolk size 3
- 2 Tbsp. double cream
- 60 gm fresh breadcrumbs
- 30 gm caster sugar
- 1 pch nutmeg Sugar for sprinkling
- 1 x 20.5 to 23 cm deep frying pan
- Cut the apricots into quarters.
- Heat the butter in the frying pan stir in the apricots and cook them gently for 5 min.
- Beat the Large eggs and egg yolk with the cream.
- breadcrumbs sugar and nutmeg.
- Pour this mix over the apricots and stir gently till well mixed.
- Cook gently for 5 min till golden brown underneath.
- Brown the top under a warm grill for 3 to 4 min.
- Turn out on to a hot serving plateSprinkle with sugar and serve hot with yogurt cream or possibly icecream
- Serves 4
