Apricot Tansy Recipe

  1. Cut the apricots into quarters.
  2. Heat the butter in the frying pan stir in the apricots and cook them gently for 5 min.
  3. Beat the Large eggs and egg yolk with the cream.
  4. breadcrumbs sugar and nutmeg.
  5. Pour this mix over the apricots and stir gently till well mixed.
  6. Cook gently for 5 min till golden brown underneath.
  7. Brown the top under a warm grill for 3 to 4 min.
  8. Turn out on to a hot serving plateSprinkle with sugar and serve hot with yogurt cream or possibly icecream
  9. Serves 4
