Potato Olive Bread
- 34 cup white whole wheat flour
- 34 cup whole wheat flour
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- 14 cup freshly grated parmesan cheese
- 14 cup chopped kalamata olives or 14 cup green olives
- 1 large garlic clove, minced
- 1 cup mashed potatoes (1 large potato)
- 1 large egg, beaten
- 14 cup beer or 14 cup ale or 14 cup water
- Preheat oven to 375 degrees.
- Combine flours, baking powder, and salt, mixing well.
- Stir in cheese, olives, and garlic.
- Combine potatoes and egg, then stir into the flour mixture.
- Add the beer or ale or water all at once and stir well for 30 seconds.
- Turn the dough out onto a floured surface and knead gently for 30 seconds.
- Form into a 5-inch round loaf and slash an 'x' across the top, dividing the loaf into four equal sections.
- Transfer the loaf to a baking sheet and bake 45 minutes or until golden brown.
- Cool on a wire rack.
