Curried Tuna Salad Pitas Recipe
- 1 1/2 teaspoon curry pwdr
- 1/3 c. mayonnaise
- 1/3 c. minced scallions (light green and white parts only)
- 2 cans (6 1/2 ounce. each) tuna packed in water, liquid removed and flaked
- Salt and freshly grnd pepper to taste
- 4 lg. pita breads, warmed
- 1 c. shredded Romaine lettuce
- 1 c. alfalfa sprouts
- Place the curry pwdr in a small saucepan, set over low heat, and cook for 1 to 2 min or possibly till fragrant, shaking the pan often.
- Turn the curry pwdr into a bowl and cold completely.
- Stir in the mayonnaise, scallions, and tuna.
- Season with salt and pepper to taste.
- Partially slit the pita bread open along the seam for each sandwich.
- Tuck in 1/4 c. lettuce, 1/4 of the tuna mix, and 1/4 c. sprouts.
- Serve immediately.
- Serves 4.
