Shrimp, Crab And Corn Soup
- 3 strips raw bacon, diced
- 1/2 medium onion, diced
- 2 c. sweet corn
- 4 oz. margarine
- 1/4 c. flour
- 2 c. fish stock (clam juice)
- 2 c. chicken stock
- 1/4 tsp. oregano
- 2 oz. pimento, diced
- 2 oz. green pepper, diced
- 1 lb. raw shrimp, diced
- 1 lb. crab meat
- 3 c. half and half
- dash of hot pepper sauce
- Saute bacon and onion; stir in corn and margarine.
- Cook until margarine melts.
- Add flour and stir well.
- Add stocks, oregano, pimento and pepper.
- Bring to boil.
- Simmer 1 1/2 hours. Add shrimp, crab and half and half.
- Season with hot pepper sauce. Bring to boil.
- Adjust seasonings.
- Simmer 10 minutes.
- Makes 1/2 gallon.
