Peanut Butter-Banana Crepes

  1. Blend eggs, milk and oil in blender until smooth.
  2. Add flour; blend well.
  3. Refrigerate 30 min.
  4. Heat medium skillet sprayed with cooking spray on medium heat.
  5. Add 3 Tbsp.
  6. batter; tilt skillet to evenly coat bottom with batter.
  7. Cook 1 min.
  8. or until bottom of crepe is golden brown.
  9. Loosen edge with spatula; invert crepe onto paper towel.
  10. Repeat with remaining batter to make 8 crepes.
  11. Place crepes, browned-sides down, on work surface; spread peanut butter down centres.
  12. Top with bananas; roll up.
  13. Sprinkle with nuts.
