Mexican Mac & Cheese
- 1 lb rigatoni pasta
- 1 lb hot pork sausage
- 1 onion, chopped
- 1 (16 ounce) jar green chili salsa (Hernandez)
- 1 (10 ounce) can rotel (tomatoes & green chillis)
- 1 (4 ounce) can green chilies
- 1 (4 ounce) can black olives, sliced
- 2 (8 ounce) packagesshredded Mexican blend cheese
- Preheat oven to 350°F Spray 9x13 pan with pam; set aside.
- Cook pasta, drain; set aside.
- Meanwhile, in large skillet cook sausage and onion until sausage is brown and onions are tender.
- Drain fat.
- Return sausage and onion to skillet and add remaining ingredients except pasta and cheese.
- In prepared baking dish (9x13) layer half of cooked pasta half the sausage mixture and half the cheese.
- Then repeat layer.
- Bake uncovered for 35 minute Let stand 5 minute.
