Avocado Salad
- 4 Avocados
- 1/2 whole Lemon Or Lime (just A Squeeze Of The Juice)
- 1 cup Cottage Cheese
- 4 slices Cooked Bacon, Crumbled
- 2 stalks Green Onion, Chopped
- 1/2 bunches To 1 Bunch Cilantro, Chopped (optional)
- 1/4 teaspoons Ground Red (cayenne) Pepper
- Salt And Pepper, to taste
- Slice the avocados in half, removing the pits.
- Next, make several parallel cuts in the flesh (towards the rind) without cutting through the rind.
- Scoop out diced avocado with a large spoon and transfer to a large non-metal bowl.
- Add a squeeze of lemon or lime juice to prevent the avocado from browning and stir.
- Add cottage cheese, bacon, green onion, and cilantro (if using) to avocado mixture.
- Stir to combine.
- Season with red pepper, salt, and black pepper to taste.
- Chill before serving.
- Note: The amount of each ingredient can easily be adjusted to suit your tastes.
- The cilantro can certainly be omitted if you dont like it, but I find it adds a very yummy complexity to this simple recipe!
