Burgos de Mayo
- 1 1/2 pounds ground chuck
- 1/2 pound chorizo, cooked and crumbled
- 2 tablespoons tequila
- 1 tablespoon fresh lime juice
- 1/2 teaspoon garlic salt
- 6 slices pepper Jack cheese
- 3 tablespoons mayonnaise
- 3 tablespoons salsa
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons sliced green onions
- 1 1/2 teaspoons chili powder
- 6 large hamburger buns, toasted
- Iceberg lettuce leaves
- COMBINE the meats, tequila, lime juice, and garlic salt in a mixing bowl.
- Form the meat into 6 patties.
- COOK as directed for Cheater Kitchen Burgers (page 119).
- During the last minute or two of cooking, top with cheese.
- COMBINE all the sauce ingredients in a small bowl.
- PLACE the burgers on the buns and serve with Mayo de Mayo and lettuce.
