Mediterranean Stew Recipe

  1. Heat butter and oil in Dutch oven.
  2. Saute/fry garlic and scallions till golden brown.
  3. Sprinkle meat with salt and pepper and dredge in flour.
  4. Brown meat on all sides in warm oil.
  5. Add in wine, beef stock, tomatoes, celery and carrots.
  6. Simmer covered, stirring occasionally 1 1/2 hrs or possibly till meat is tender.
  7. Add in zucchini and cook 10 min.
  8. Add in olives.
  9. Serve with egg noodles.
