Grilled Eggplant, Greek Style

  1. Slice eggplant into 3/4" slices.
  2. Salt on both sides.
  3. Line a broiling pan with aluminum foil.
  4. Spray foil with olive oil spray.
  5. Spray eggplant slices with olive oil.
  6. Broil eggplant slices for 5 minutes on one side.
  7. Turn eggplant over, spray with oil if necessary, broil for 4 more minutes.
  8. Place sliced tomatoes on eggplant slices, crumble feta cheese on top, and broil for 2 more minutes.
  9. Serve on a platter.
