Cornish Game Hens With Orange Glaze

  1. Remove giblets from hens.
  2. Rinse hens with cold water and pat dry.
  3. Combine seasonings, stirring well.
  4. Sprinkle cavities with half of seasonings, and close cavaties.
  5. Secure with wooden picks; truss.
  6. Brush with butter and sprinkle with remaining seasons.
  7. Place hens, breast side up, on a rack in a shallow roasting pan.
  8. Pour water into pan to cover bottom.
  9. Place in upper half of oven, and bake at 425F for 45 minutes.
  10. Brush hens with butter, and spoon 1 tablespoon marmalade on each breast.
  11. Bake an additional 35 to 45 minutes or until juices run clear when pierced with fork.
  12. garnish with watercress and orange slices.
