Prawn Skewers with Chilli and Lime Noodles

  1. Pour the dressing over the prawn skewers and marinate for 10 minutes.
  2. Combine all the ingredients for the salad and toss through the extra dressing.
  3. Heat some oil in a grill pan and grill the skewers for 2 minutes each side until cooked through and golden.
  4. Spoon the salad onto serving plates, top with the prawn skewers and sprinkle with the peanuts.
  5. Serve immediately.
